HISTORY OF MILK PRODUCTION

In 1870,the first dairy foods manufacturing factory was opened in Derby,and by 1900,a whole system of factories was in operation throughout the country.It was not until 1884 that the first milk was sold in bottles.In 1884,the heat treatment of milk by sterilization was tried.Louis Pasteur's experiments on heating harmful bacteria in late 19th century paved the way for the hygienic production and distribution of milk and dairy products.
The Importance Of Milk In Diet
Milk is the single most complete food known to exist naturally.so it contains sufficient nutrients in right proportion.Milk is,however, deficient in vitamin C and iron ,containing only traces or these.Human babies are born with a supply of these in a body.Milk is a valuable food not only for infants,but for people of all ages.
EFFECTS OF HEAT ON NUTRITIONAL VALUE OF MILK
PASTEURIZATION:causes a slight loss of thiamin and 25%loss of vitamin C.UHT AND DRIED MILK:also have slight loss.
STERILIZATION:The sugar lactose is partially caramelized and this accounts for some of the flavour and colour. change.CONDENSED MILK:Also have slight loss.EVAPORATED MILK:About 40% of thiamin and60% of vitamin C are lost.
